Simple Vegan Chocolate Cupcakes

We all know that cupcakes are vegetarian, unless of course, there is Gelatine in them. So, we’ve decided to share a vegan recipe. There are quite a few out there now, but we’d rather do a vegan recipe than an ordinary vegetarian one.

Our recipe is one that doesn’t contain eggs, or any ‘egg alternative’. There are no flax eggs is what we mean. It’s eggless! The recipe shows that you don’t always need ‘special’ ingredients when you are baking vegan, with the exception of Xanthan Gum.


For the Cupcakes

  • 3 Cups All-Purpose Flour
  • 1/2 Cup Unsweetened Cocoa Powder
  • 2 1/2 Teaspoons Xanthan Gum
  • 2 Teaspoons Baking Soda
  • 1 Teaspoon Rock Salt
  • 2 Cups Water
  • 2 Cups Demerara Sugar
  • 3/4 Cup Vegetable Oil
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Teaspoons Vanilla Extract

For the Decoration

  • 2 Teaspoons Vanilla Extract
  • 2/3 Cup Icing Sugar
  • 4 Teaspoons Water
  • Any additional toppings you wish to add


  1. Preheat oven to 180 degrees C.
  2. Whisk the Flour, Cocoa Powder, Xanthan Gum, Baking Soda, and Salt together in a bowl.
  3. Add the Water, Sugar, Vegetable Oil, Vinegar, and Vanilla Extract into the dry ingredients.
  4. Mix until they have combined into a batter, and spoon into cupcake cases.
  5. Bake in the oven for 10 – 15 minutes, then leave to cool.
  6. Mix the Water, Icing Sugar and Vanilla Extract to form the icing.
  7. Decorate the cupcakes with the icing, and any additional toppings you wish.
